Nonna started it in the front room of a terrace on Ramsay Street. Her grandsons run the pass now and the sauce has not changed, mostly because they are not game to try.
Eight or more, or a function in the back room, ask for Marco on 02 9798 0000.
Thirty nine years of it
1987
Nonna Rosa puts four tables in the front room of the terrace and cooks whatever the greengrocer had that morning. No menu. People find out anyway.
1994
The shop next door comes up. The wall goes, the kitchen moves to the back, and the ragu recipe gets written into the notebook that still lives above the stove.
2011
Marco and Danny take over the pass. They change two things on the menu in the first year and put one of them back after a month of complaints.
Today
Pasta rolled out the back every morning, tomatoes bought by the pallet in February, and the same six hour ragu that went on at seven this morning.
The back room
The room behind the kitchen seats twenty eight at one long table, or thirty six if we break it into three. It has hosted four generations of one family and we have the photos on the wall to prove it.
Set menus start at four courses. Tell us what the occasion is and Marco will work the rest out on the phone.
